Black Apricots

Black Apricots (known internationally as Gün Kurusu in Turkey) are 100% natural, unsulphured dried apricots. While bright orange apricots are treated with sulfur dioxide gas ($SO_2$) to retain their vivid color and inhibit oxidation, black apricots are cured purely under direct sunlight without chemicals or preservatives. This traditional drying causes natural caramelization and oxidation, transforming the flesh into a deep brown or ebony shade.
